Sashy's College Football Friday!!!

Hi my pals! I hope you are all having a good week. It is cold and rainy here in Michigan today, so I am staying in pretty much. I am guarding my house from the inside, watching out the window for intruders, especially furry rodent kind. The past 2 Saturdays have not been good for the Wisconsin Badgers so I am relieved to tell you that they don't play this weekend and will return next Saturday to face Purdue at home. I am making a tailgate post anyway cause Daddy still watches football all day so we may as well party!

Mommy has been going to the farmers market a lot lately and bringing home healthy looking stuff like this.

Here is even a bigger picture. Blechhhhhhhh!! Veggies!!

Somehow though, Mommy cooks these all together into something called soup. I like soup, Mommy mixes it with my food, so I guess she can keep going to the farmers market(without me sniff) as long as she makes me good stuff to eat.
Here is the menu Mommy and I worked on:

1. Assorted cheese and crackers(always there must be cheese)
2. Homemade minestrone soup
3. Grilled cheese sandwiches
4. Homemade applesauce(Mommy makes the best applesauce)
5. Homemade apple cake(recipe follows

Apple Cake
~~~~~~~~
1/2 cup + 2 tablespoons unsalted butter (divided use)
1 cup granulated sugar or Splenda® granulated sugar substitution
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking soda
1 tsp cinnamon
1/2 teaspoon salt
2 cups all-purpose white flour
2 cups apples, peeled and chopped
Cream the 1/2 cup butter with 1 cup sugar and vanilla. Combine flour, baking soda, salt and cinnamon together. Alternate the sour cream with the flour mixture until it is all blended in, then stir in the apples by hand. Pour into a greased 9x13 inch pan.

Topping:
Mix together 2 TBSP soft butter, 1/2 cup brown sugar and 1 tsp. cinnamon and crumble over the top of the cake.

Bake at 350 for 35-40 minutes
